Time for another month of Recipe Redux. This month's theme was creative quick breads and this gingerbread is what I came up with. I've been craving gingerbread for a few weeks now. More specifically, these Pumpkin Gingerbread Muffins. When I saw this month's theme, I immediately knew I wanted to make gingerbread but I decided to see what new mix-in I could come up with.

My creativity was helped along by the giant bag of pears I bought at Meijer last weekend that all happened to ripen at the same time. Pears and gingerbread sounded like they'd be a great match…and voila! This bread was born.

I made it once for myself and then again a few days later to take to my MOPS group. It got the seal of approval there, so I thought I'd share it with you guys.

Here's how you make it:

Serves 1 loaf

Pear Gingerbread

Pear Gingerbread

Ingredients

2 cups chopped pears
1/3 cup brown sugar
1/2 cup molasses
1/2 cup plain yogurt
2 eggs
2 tsp ground ginger
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 1/2 cups white whole wheat flour
Optional glaze - 1/4 cup plain yogurt + 1 Tbsp powdered sugar
Optional topping - pomegranate arils

Instructions

  1. Combine all ingredients except flour in a blender and puree until smooth.
  2. Add flour to blender and process until just combined.
  3. Pour into greased loaf pan at bake at 350 degrees for 45-50 minutes.
  4. Let cool completely.
  5. Drizzle with glaze and top with pomegranate just before serving if desired.

Notes

If you don't have a blender you could use a food processor. Or, just puree pears and mix everything in a mixing bowl. Or simple mash pears well by hand.

The best thing about this bread is how easy it is to prep. Just throw everything in a blender or food processor and then pour into a loaf pan. I line my loaf pan with parchment paper for easy removal.

The glaze is just plain yogurt mixed with some powdered sugar. You could also just use vanilla yogurt. Or leave the glaze off altogether. Plus I added some pomegranates for a festive touch!
