Hi friends!

As promised, I'm back this week with a few new recipes! This one is super simple but I wanted to share because I wanted to introduce you to my new favorite way to add some vegetables to your smoothies. About 6 months ago I shared this Blueberry Cauliflower Smoothie which I still make all the time. Today we're moving on to zucchini as our veggie of choice, which is perfect because your gardens and/or the farmer's markets are probably overflowing with them right about now.

End of summer is the perfect time to stock your freezer with zucchini so you can enjoy it in your smoothie year round! I just wash mine, slice and chop into chunks, freeze on a baking sheet and then transfer to a ziploc bag. I made this a bowl because I have a personal preference for extra thick smoothies but with a little extra liquid, you can easily make this a drinkable smoothie.

Squish and Little Miss have been gobbling this smoothie up this summer because I sliced and froze a ton of peaches after we went and picked them. However, once we work our way through our stash, i'll probably make this same smoothie with frozen wild blueberries. If you or your kiddos aren't into drinking green stuff, blueberries are perfect for hiding the green color!

I don't add any extra sweetener but feel free to throw in a date or two (pits removed) for a little extra sweetness. Also, I use water for my liquid…but you could easily use any kind of milk or juice. And depending on what I have on hand, I use either vanilla or plain yogurt.

Ingredients

  • 1.5 cup chopped zucchini, frozen
  • 1.5 cup sliced peaches, frozen
  • 1 cup full-fat vanilla yogurt (or plain)
  • 3/4 - 1 cup water (or milk/juice/etc)
  • 1-2 pitted dates to sweeten, optional

Instructions

Combine all ingredients in a high-powered blender and blend until smooth.

Pour into two bowls. \

Add toppings as desired. Serve immediately.
