Just popping in to share these Sheet Pan Shrimp Fajitas. There's nothing super Valentine's Day-esque about these…but they're quick and easy and they taste good. So…that's a win any night of the week in my book!

Shrimp is one of my favorite quick-cooking proteins. For this recipe you basically just toss them in some seasonings, throw them on a pan with some thinly sliced peppers and onions, let them cook for 10 minutes while you prep some 90-second rice and open a can of beans and boom! Dinner is served. You could also put everything in tacos or over some lettuce for a taco salad!

Preparation 5 min Cook Time 10 min Serves serves 4     adjust servings

These Sheet Pan Shrimp Fajitas are quick, easy and perfect for dinner on a busy night. They cook quickly and make great leftovers for lunch or dinner later in the week.

Ingredients

  • juice from one lime
  • 2 tsp oil (i used olive oil)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 red pepper, thinly sliced (or half red, half orange/yellow etc)
  • 1 pound raw shrimp (deveined, peeled or tail on)
  • rice, black beans, guac, salsa etc for serving (optional)

Instructions

In a small bowl, combine lime juice, oil, spiced and garlic and stir to combine. 

Place shrimp, onion and peppers in a large bowl. Add spice mixture and stir until everything in well coated. 

Pour onto a foil-lined baking sheet. 

Bake at 400 degrees F for 8-10 minutes. 

Serve over rice and beans, topped with guac and salsa (or in tortillas, or over lettuce, etc).
