- 2/3 cup loosely packed sun-dried tomatoes (preferably packaged dry, not in oil*)*
- 3 cups (360 g) raw walnuts
- 4 cloves (6 g) garlic, minced
- 1/2 tsp sea salt, plus more to taste
- 1 heaped Tbsp smoked paprika
- 1 heaped Tbsp ground cumin
- 1 heaped Tbsp chili powder
- 2 tsp (8 g) coconut sugar (omit if avoiding sugar, or sub a little stevia)
- 1-2 habanero peppers, seeded and chopped (more or less to spice preference // or sub 1 chipotle pepper in adobo sauce, plus more to taste, but this will make the recipe no longer raw)
- Optional: 1-2 tsp nutritional yeast
- Water as needed (about 1/4 cup)
FOR GARNISH
- Cilantro
- Corn Tacos
- Avocado
- Radish
